June Favorites




Here are my favorite recipes from The Messy Apron archives that were posted in the month of June.

Barbecue Beans
Use your favorite barbecue sauce to simmer up a quick pan of delicious beans.

Bean Salad with Mole Vinaigrette
A bottle of dark chocolate flavored balsamic vinegar inspired this hearty salad covered in a dressing reminiscent of mole sauce.

Blueberry Rhubarb Sauce (see photo above)
I'd certainly stand in line to vouch for the deliciousness of the blueberry-rhubarb combo! This sauce is great on plain cake or vanilla ice cream.

This salad, which helps tide me over if there’s a delay in local spring produce, is loaded with chickpeas, kalamata olives, feta cheese and pepperoncini peppers.

Fresh Peas with Mint
Sweet little green jewels just picked from the garden make this very simple salad one of the best things in all of spring. I hope to grow peas forever, just so I can make it again and again.

One of my favorite treatments for green beans. Use a little or a lot of wasabi to your own taste. (I like a lot!)

Sweet and tart squares reminiscent of key lime pie.


Napa Cabbage Slaw with Asian Dressing
A light and fresh cabbage salad with a sweet and sour dressing. Add whatever vegetables you like to accompany the cabbage.

A fairly simple noodle dish with lots of flavor.

Pasta Carbonara with Garlic Scapes and Garlic Chives (see photo below)
This twist on classic pasta carbonara may not be authentic, but it is delicious with the mildly garlicy addition of early garlic stems and garlic chives.


Peanut Butter Ice Cream
Peanut butter. In ice cream. Really!



Rhubarb gets a big boost from brown sugar and vanilla in this especially flavorful and versatile dessert sauce.

A rich and delicious dessert with a shortbread cookie crust, custard filling with rhubarb, and a cheesecake-like topping.

My go-to recipe for the ultra-seasonal asparagus.

A fresh take on the heavily dressed broccoli salads with bacon and raisins. This one has just a touch of mayonnaise in a sweet-tart vinaigrette and dried cranberries in place of the raisins. I left the bacon right where it was.

Strawberry Rhubarb Freezer Jam
A simple and delicious way to save some of those fresh spring fruits for later.

This simple and tasty seasonal sauce is great on ice cream or folded into whipped cream to make a fool.

Just five ingredients get tossed in a wok to make this fast, easy and flavorful stir fry.

Shelled peas, sugar snap peas, and yellow split peas join up in a flavorful salad with a simple lemon-walnut vinaigrette.
